Tortellini Soup

This is a quick and healthy soup and it's delicious!

1 lg. onion, diced
2 cloves garlic, minced
1 Tbsp. olive oil
3-14 oz. cans of beef both 
1-16 oz. can stewed tomatoes
1/2-3/4 C. picante sauce or salsa
1 tsp. basil leaves, crushed
1 pkg. frozen cheese tortellini
1 green pepper, diced
1 C. grated Parmesean cheese
 
1. Cook onion and garlic in olive oil in large saucepan or Dutch oven until tender.
2. Add broth, tomatoes, picante sauce, and basil; bring to a boil.
3. Stir in tortellini; simmer uncovered for 15 minutes.
4. Stir in green pepper. Continue to simmer for 3-4 minutes or until tortellini and pepper is tended.
5. Serve with cheese sprinkled on top.
